30 Days Dinner

So to wrap up for today, I am going to cover what I did for dinner. My first two meals of the day really are very easy, seeing as I do shakes for both, with a little bit to eat thrown in. Dinner requires a bit more thought and planning. Thankfully, when you are going through the program, you are added to an amazing Facebook group and they will give you recipes that you can use for all 30 days. There are great options in what they give you and you totally can be successful following that plan. That is what I did for the first two rounds that I did.


This round though, I am doing it a bit more "shoot from the hip" style. And today, I have been craving tacos. Now.... there are companies out there that make wonderful gluten free tortillas. I really like Siete brand - they have tortillas, chips, hot sauce, and lots of other things that are all compliant on the 30 day program. These items appear in my cooking frequently. But I didn't have time today to go and pick up a pack or tortillas, and really, what are tacos without cheese and sour cream?


So I went for a spin on Mexican instead. And this allowed me to use one of my favorite new cooking tools. The Instant Pot! I know, I know, I am super late to this party. I just never saw the use for one. I mean, I had a crock pot, I can cook rice on the stove, whats the point of getting one more gadget? And then it happened. I made rice in my moms for the first time and it was maybe the best rice I have ever made. Perfectly cooked. And then we made BBQ chicken sliders, and that was super easy, and on, and on, and on. Obviously now I am obsessed. So I pulled it out today and used that to help me make the brown rice for the base of my taco bowl.


I make about a cup of long grain brown rice, with a little more than a cup of water. Push the rice setting on your Instant Pot and then just let it go! It turns out perfectly every time! So much easier than the 45-50 minutes it takes on the stove top. And the best part about this is that I can just set it and forget about it. If this gets done before everything else, just let it naturally depressurize. If you need to hurry it up, do a quick release. Either one works just fine!


Next up, I rinse a can of black beans and cut up a sweet potato. I have put beans into my tacos for a while now, but the sweet potato is something new. But I love the flavor that it adds and it works so well with Mexican!

Next, throw the sweet potato onto the stove with a little bit of olive oil. Saute this until it starts to soften up, then add the whole can of beans in. Let these cook until the potatoes are cooked through. Once they are cooked, I add in just a little bit of the seasoning from my taco packet to make sure that they get some of the good spices on them as well! This would be the time to add in any onions or peppers if you wanted to throw those in as well. Once these are cooked, put them into a mixing bowl on the counted and let them sit while you cook up the meat! I use ground turkey, but whatever you like to use will work! You will then use the majority of the taco seasoning packet on the meat. This way everything gets the flavor you want it to have.


When the filling is all cooked through, make sure that the rice is ready to go. Do a quick release to get out any of the remaining pressure and serve some up in a bowl!


Scoop up some of the filling and add it right on top of the rice. That's all there is to it! Super easy dinner, ready in about 15 minutes, and its healthy! Over this, I added a little bit of salsa, and a dash or two of that Siete hot sauce that I mentioned above! Adds a little liquid to it and some heat! You could also add a slice or two of avocado on top and still be compliant for the 30 Days program. Cheese, sour cream, or any of those goodies would be great on here too.... but unfortunately will have to wait until after the 30 days are up!

That is it for my day as far as food and shakes go. I sometimes also will add a cup of the detox tea in at night if I am needing just a little something extra!
